Avocado Caprese Salad

A light refreshing hors d’oeuvre, such as a Simple Caprese Salad, easily becomes the rave of a dinner party. It’s infused with fresh flavors… especially the basil. I could literally eat basil right out of the garden and be in heaven!

Don’t get me wrong— a traditional caprese salad is delicious, yet if you’re sensitive to dairy or trying to go more plant-based, you can easily tweak this recipe. We’ve removed one of the most common food sensitivities and replaced it with one of the top beauty foods. Yep, we had this simple summer dish the healthiest and tastiest one out there!

Simple Caprese Salad with Avocado

Caprese salad usually has tomato, basil and mozzarella as the foundation. Yet cheese is dairy… and dairy is one of the most common food allergies. It can lead to digestive issues, acne, bloating, fatigue and more. I am sensitive to dairy and really have to watch my intake.

The funny thing is, once I started leaving the cheese off of my favorite tacos, side dishes and burritos I actually didn’t taste a difference! The food was just as good AND I didn’t have any consequences afterwards. This salad removes the cheese and replaces it with one of the most amazing superfoods out there: avocado.

Avocado Caprese Salad

Description

It’s pretty hard to top a juicy, garden fresh, still-warm-from-the-sun tomato, but this comes pretty close. Creamy avocado stands in for cheese in our version of the classic Italian Caprese Salad. We don’t think you’ll miss it.


Ingredients

  • ½ ripe avocado
  • 1 small ripe tomato
  • ¼ cup fresh basil leaves (about 8–10)
  • Sea salt and black pepper
  • Balsamic vinegar, optional
  • Olive oil, optional

Instructions

  1. Thickly slice the avocado and tomato.
  2. Arrange on a plate along with the basil leaves.
  3. Season well with salt and pepper. If desired, drizzle with balsamic vinegar and olive oil.
  4. Eat immediately.
