The $4.40 Brinner: Egg and Bacon Tart

Who doesn’t love a little breakfast for dinner? It’s my default dinner when I’m short on time, money or energy. It’s easy to make and it’s kinda fun too… to turn the day upside down. Breakfast at dinnertime? I’m all for it.

I remember growing up that a handful of times that my mum can’t even remember doing it but she did, would make us pancakes for dinner. I thought it was THE best thing in the world. It seemed rebellious and chaotic and delicious. I wish she did it more.

So I’m embracing it and encouraging you to do the same.

This time of year is crazy. Crazy busy, and crazy EXPENSIVE. Don’t you feel like you’re dropping dollars constantly on things? Ugh. This dinner only costs $4.40 to feed four people. It’s a bargain.

As you probably know I shop at Woolies, so these are all bits and pieces I have grabbed from there. The pastry I always have in the freezer, because it’s a staple that always gets used, and it’s only $2.30 a pack.

I love rocket and think it goes with almost everything, but if you don’t agree… leave it out. It’s kinda just there because I wanted to make this feel slightly healthier, and for $1 it’s my go-to for adding green to dishes.

Here’s what I bought:
Woolworths Bacon – $12 per kg {$1.45 for four serves}
Woolworths Puff Pastry – $2.30 {35cents for four serves}
Woolworths Free Range Eggs Dozen – $3.60 {$1.20 for four serves}
Woolworths Tomato Paste – 80c per tin {40c for four serves}
Woolworths Rocket – $2.00 per bag {$1 for four serves}
