My dad didn’t always cook when we were kids {read: he never did} but when he did, he made fried rice. Family members remember it fondly, but I always groaned on fried rice night. {Sorry dad if you’re reading this!}. So I feel that it’s my duty in life to learn how to make GOOD fried rice, and over time I’ve realised that it’s really quite easy to do, and it’s a few key things that make it actually taste amazing.
First tip: Make the rice the day before. Freshly made rice is going to end up turning it into a gluggy fried rice. So make the rice the day before, or if you’re short on time or have forgotten these microwave rices are amazing. Don’t cook them, just open and use to make the fried rice.
Second tip: Cut everything up before you start cooking. This means that nothing burns or over cooks.
Third tip: You need to add flavour in. I like garlic, ginger, and sesame oil. They’re my magic trip. The sesame oil gives the rice a gloss and the garlic and ginger make it taste like it’s straight out of a restaurant.
This meal feeds four people as a main meal. If you had leftover roast meat or even a BBQ chicken, you could throw it in there, and you could even add in any vegetables that you wanted to. Try grated pumpkin, or even tomatoes! Anything goes, as long as you follow the three tips above.
