Freezer-friendly meals: Three dinners to make ahead and eat later

If you’ve been shopping at Woolies for a while, or even a short while, you might have noticed that they have a Macro Wholefoods Market range, which is a section of foods filled with items that are both nutritious and delicious, and affordable. Sometimes items in this range are organic {but they’ll be marked when they are}. To be honest with you, I’ve dabbled in a few Macro products, but I tend to always be on a budget so kinda ignored it for the most part.

My bad.

I assumed it was going to be more expensive {which is understandable because you know, better quality generally means more money}. Recently though, I started buying the Macro chicken cos I’m fussy when it comes to chicken and I realised it’s affordable and it opened my eyes a little. My sister was staying with us for a while, and she’s ALL about health. So I started looking further afield than the usual aisles I shop from. I love a challenge, so I quite liked thinking differently.

Woolies is actually bringing out a whole new range of Macro goodies for us to get excited about which you can find instore now. The croissants aren’t from the Macro range, but I had to share because I’ve had four people private message me to tell me how good they are! They’re located near the Macro health aisle and they’re free from gluten. They also have Australian Cricket Powder, which I’m slightly freaked out about but willing to give it a go. The new Woolworths Macro bread range is delicious though, and comes in different flavours too.

Today I’m sharing three recipes that I’m loving lately, and these are the ones that you can smash out on Sunday, and then enjoy all week. I love a good cooking session on a Sunday, and definitely appreciate it when it gets to Wednesday and I can pull out something I prepared earlier {I feel like I’m winning at life}.

FREEZER-FRIENDLY MEALS: Three dinners you can make now, eat later


CHICKEN & BROWN RICE SOUP
This soup is a game- changer. It’s so simple to make, but it is packed full of flavour. It’s made with the standard chicken soup ingredients, carrots, celery, chicken stock, and I’ve added in Macro free-range Chicken and Macro Organic Brown Rice. I finish it with half a cup of cream at the end, but if you’re making ahead to freeze, you could leave that out and add in when you’re serving I’m obsessed with the new Macro Pumpkin & Sweet Potato Wholemeal bread. It’s delicious with the soup!

CHILLI BEEF & BEAN MINCE
Who doesn’t love a good Mexican dish? This chilli beef and bean can be used in a nachos or even in tacos. It’s nice to make this one head and freeze it and bring it out whenever you need. I’ve jam-packed mine with veggies, because I like it that way, but you can leave them out if it’s not for you. I use the Macro 4 Bean Mix, but they also have a 3 Bean Mix in the range too. Turn it into a nachos bowl and add in all your favourite bits and bobs. You can get the full recipe here.

This recipe is SO yummy, and so easy to make. I throw everything into a clip-seal bag, toss it around and freeze it for when I’m ready to use it. And then it just goes onto a tray, into the oven and cooks away.

I use the Macro Organic Honey and the Macro Free Range Chicken drumsticks.

I love serving this on a big platter, and if you’re feeling a little indulgent, grab some Macro bread {Pumpkin and Sweet Potato is my choice for this dish}, whack some butter on it and then dip it into the sauce. It’s soooooo good.
